Avo & goat butter breakfast

Good morning! If you need some inspiration for a healthy and balanced breakfast, look no further:


It’s easy to make and we’re pretty much covered when we think of protein, healthy fats and carbohydrates.


Ingredients:

1 ripe avocado

Wheat free rye cakes

Cherry tomatoes

Goat butter

Thyme

Salt

Olive oil


Method:

Mash the avocado then add a pinch of salt, thyme and a bit of olive oil. Then on rye cake slices (or oat cakes) add the mashed avocado and goat cheese. I like to eat it with cherry tomatoes or red bell peppers (depending what I’ve got in the fridge).


Goat butter is lower in lactose so it's easier to digest. You can also use normal butter, ideally unsalted and from grass fed cows.
