Banana almondy oat bars

I like to have a filling and healthy snack with me when I’m busy out and about, or before going to the gym. These banana oat bars are so easy to make and they are filled with complex carbohydrates (oats), good fats (coconut oil, nut butter, flaxseeds) and protein (grounded nuts and nut butter). They are also gluten and dairy free.




Ingredients:


1 cup of oats (if you are gluten free, use gluten free oats)

3 tbsp grounded almonds (or nuts of your choice)

3 ripe bananas

2 tbp maple syrup

2 tbsp coconut oil

1 tbsp grounded flaxseeds


Method:


Preheat your oven to 200°C/Gas mark 6.


In a bowl, mash the bananas with a fork until they are smooth.


Add the coconut oil and nut butter together in a pan stirring constantly over a low heat until they are melted. Pour this over the mashed bananas in the bowl and stir well.


Next, add the maple syrup, the oats and then the grounded almonds and flaxseeds. Mix everything together until you get a sticky consistency.


Then grease a baking tin with coconut oil and add the mixture pressing down to ensure it is compact.


Bake in the oven for 15-20 minutes until golden brown.


Wait to cool down completely before you cut it into pieces.
