This meal is great to prepare if you don’t have much time on hand; it is easy to make and it is full of nutrients. Salmon is my favourite oily fish not only because it has a great flavour and it is one of the best Omega 3 sources, but because it is sooooo easy to cook.
The 'secret' to this dish is the dressing which will enhance its flavour so make sure you won’t skip this step.
- Green beans
- ¼ teaspoons each of salt and pepper
- Ghee or butter
- For the dressing: 1 clove of chopped garlic, 2 tablespoons of olive oil and a pinch of salt.
Season the salmon with salt and pepper and leave it aside for 5 minutes.
Cut the broccoli into 2-inch (5cm) florets and steam along with the beans in lightly salted water for about 5 minutes.
Fry the salmon on plenty of ghee or butter, a few minutes on each side.
In a bowl, mix the chopped garlic with the oil and add a bit of salt.
Add the salmon and steamed veggies on a plate then pour the dressing over. At the end sprinkle some oregano over it.
