I used to avoid eating fish at all costs, I didn’t like the taste, texture, plus I had high chances to choke on a bone and I couldn’t take this risk :) But then I found out about the amazing benefits of the holy Omega 3 and how the best way to get this essential fatty acid absorbed by my lovely cells is by eating oily fish such as mackerel, trout, sardines, wild salmon. There are also vegetable sources for Omega 3, true, but they don’t get absorbed that well at all.
So, this prompted me to creating recipes that I like in order to eat oily fish and this one is a winner; the secret is using the garlic sauce ;)
- Baby potatoes, cut in half
- Olive oil
- Salt &pepper
For the garlic sauce:
- 3 cloves of garlic
- 1/4 cup of water
- 3 tablespoons olive oil
Season the trout, inside and out, with salt and pepper. Wash and drain the baby potatoes (no need to peel them), then put them in a roasting tray. Coat them with olive oil, rosemary, salt and a bit of black pepper then let them cook in the oven for 20 -25 minutes or until tender. Half way through, add the broccoli & trout and let them all roast together for 10-15 minutes.
Garlic sauce: crush the garlic cloves then mix them well with the olive oil and a pinch of salt. Add the water and mix all ingredients together. You can also use a blender, but I prefer to do it manually as it doesn’t take that long.
When ready, place the fish, potatoes and broccoli on your plate, then add the garlic sauce on top.
